Description
Holyrood is the first operational whisky distillery in central Edinburgh since 1925. It sits on the edge of Holyrood Park and is housed inside a former railway shed dating back to 1831. Founded by Canadian Rob Carpenter who is also the founder of the Canadian branch of the Scotch Malt Whisky Society, he first had the idea for an Edinburgh distillery in 2013. He and his wife Kelly along with co-founder David Robertson made the dream become a reality in 2019. Holyrood was created with the intent of proving that there is a different way of producing single malt whisky and focuses on exploring new recipes using heritage malts, specialty malts, and different yeasts.

Nose: Strawberries, blackcurrant, cherries, fruit slice, cheesecake.
Palate: Scottish tablet, fudge, doughnuts, breakfast cereal.
Finish: Silky, warm, lingering, dry.

The Noir Trilogie Bordeaux Yeast is full of berry nice notes of cherries, strawberries and
blackcurrants, with just a hint of Scottish tablet. The Holyrood Noir Trilogie weaves a
story that sees French wine yeast plot unexpectedly with Scottish malt before pursuing
a classic romance with wine casks, uncovered from the finest vineyards.
