Description
Holyrood is the first operational whisky distillery in central Edinburgh since 1925. It sits on the edge of Holyrood Park and is housed inside a former railway shed dating back to 1831. Founded by Canadian Rob Carpenter who is also the founder of the Canadian branch of the Scotch Malt Whisky Society, he first had the idea for an Edinburgh distillery in 2013. He and his wife Kelly along with co-founder David Robertson made the dream become a reality in 2019. Holyrood was created with the intent of proving that there is a different way of producing single malt whisky and focuses on exploring new recipes using heritage malts, specialty malts, and different yeasts.

Brand Tasting Notes: The nose has dried fruits, tropical fruits, raisins, a hint of butterscotch, freshly baked cake, sticky toffee pudding, soft leather, and biscuits. The palate has toffee, caramel, vanilla, digestive biscuits, ginger spice, butterscotch, tablet, and a light savory salinity with raisins.
