Holmes Cay (pronounced “key”) was co-founded by the husband/wife Eric Kaye and Maura Gedid. They curate a global collection of small-batch, limited-edition rums all over the world, and will even release rums from better-known distilleries that might not fit a particular profile. Founded in 2019 because they couldn’t find good sipping rums that interested them.
Taste
Uitvlugt (“eye-flot”) Estate was where this rum was originally distilled on the historic French 4-Colum Savalle column still. That column still is now producing rum at the Diamond Distillery in Guyana. This rum spent the first 2 years maturing in Guyana with tropical aging, then transferred to age for 16 years in the UK.
Tasting notes from the brand: Golden honey with a whiff of brine. Overripe tropical fruits, almonds, herbal, and a touch of cocoa. Light tobacco lingers on the finish.
