Hillrock is proud to be one of the few “field-to-glass” whiskey producers in the world and the first USA distillery since before Prohibition to floor malt and handcraft whiskey on site from estate-grown grain. Hillrock’s commitment to quality embodies the rich history of artisanal distilling in the Hudson Valley. By controlling every aspect of production from planting & harvesting heirloom grains, to smoking our malt, to crafting whiskies in our copper pot still, to aging in small oak barrels and hand bottling, we are able to create the highest quality whiskies reflecting the unique local terroir.
Taste
Hillrock’s Solera Bourbon is the first American whiskey to be aged in the Solera method which is typically used in Sherries and other fortified wines. The solera aging method involved a pyramid of barrels where a small portion of the whiskey is removed periodically from the lowest tier of barrels and an equal measure of new whiskey is added to the top barrels. No barrel in the Solera is ever emptied and over time, the older whiskey in the Solera mingles with the younger whiskies to create unmatched depth & complexity.
